
Last night we were in the mood to try something different and roaming down the ever packed aisles of Whole Foods, Maria thought about making her mom’s recipe for Cornish hens. We picked up the necessary ingredients as well as stuff for some mashed potatoes and after waiting in line for a ridiculous amount of time paid up and headed back to the apartment to cook.
Here’s the recipe (serves 2):
Pre-heat your oven to about 350 degrees. Rub the cornish hens with vinegar, and Adobo seasoning. Sprinkle some dry Tarragon leaves and add some butter to each hen (as shown). Throw them into the oven for an hour and a half.
While the hens are cooking, we made the mashed potatoes. Boil a pot of water (enough to hold the potatoes you are making) and add the potatoes (3 Yukon gold potatoes) to them once boiling. I like to add some salt to the water. Cook until potatoes are ready (you can stick a fork easily through each potato). Once done, slowly mash each potato in a bowl, adding 2 tbsp of butter and half a cup of milk along with some Kosher salt to taste. Finally chop up a scallion and throw it into the mix. You can also serve with a side of grilled asparagus spears to satisfy your green tooth.
Granted you need some time to make this, it is still a very easy and mouth watering recipe.
