Home-made lamb on rice

Here’s a delicious and quick recipe I tried out last night thanks to some inspiration from the all-recipes app on my iPhone (decent app but the number of recipes it has it’s too limited).

Take some lamb stew meat (.5 lbs if cooking for two) and rub some salt, pepper and any other spices you have and/or like on it. I added some cumin, and red pepper powder. Throw it in a skillet with olive/vegetable oil untll the lamb is somewhat cooked. While this is happening chop up a 1/4 of a red onion and any other vegetables you might have (peas, beans, etc). I added some mushrooms and garlic. Throw that in with the lamb and cook until lamb is medium.

In the meantime take a pack of pilaf or wild rice that you get at any grocery store and cook in chicken broth for suggested time (usually 15 to 20 minutes).

Stir in the lamb mix with the rice once cooked and garnish with cilantro if you choose. That’s it. Apologize for not being able to post a picture this time.
